There’s nothing quite like a buttery puff pastry filled with light, airy cream and topped with fresh berries. Using a cream charger (N2O whipped cream dispenser) makes the cream filling extra smooth and fluffy—almost like a mousse.

 

A Whipped cream charger allows you to whip cream in seconds while incorporating tiny bubbles of nitrous oxide. This results in a lighter, more stable cream compared to hand whisking. It’s especially useful when you want that professional, bakery-style texture for your desserts.

Instructions

Step 1 – Bake the Puff Pastry

  • Preheat oven to 200°C (400°F).
  • Cut the puff pastry sheet into rectangles or leave it whole for a large tart.
  • Place on a baking tray lined with parchment paper.
  • Lightly score a 1 cm border around the edges without cutting through. This will help the edges rise while the center stays flat.
  • Brush edges with beaten egg.
  • Bake for 15–18 minutes until golden and puffed. Let cool completely.

  

Step 2 – Prepare the Cream Filling with a Cream Charger

  • In a bowl, mix cream cheese (if using), powdered sugar, and vanilla until smooth.
  • Add the heavy cream and whisk lightly until combined.
  • Pour mixture into a whipped cream dispenser.
  • Connect the whipped cream dispenser to the nitrous oxide tank using a pressure regulator, then release the N2O, shake well, and refrigerate until ready to use.

Step 3 – Assemble the Tart

  • Once the pastry base is cool, gently press down the center if it puffed up too much.
  • Pipe the whipped cream filling evenly across the tart base using the dispenser nozzle.
  • Arrange fresh berries on top.
  • Garnish with mint leaves and a dusting of powdered sugar.

For extra flavor, drizzle melted chocolate or berry coulis over the top.

Swap berries for sliced peaches, kiwi, or mango for a tropical twist.
