Preheat your oven to 180°C (350°F). Line your baking tray with parchment paper.
Beat eggs and sugar together for 5–7 minutes until pale and fluffy.
Sift in flour, baking powder, and salt. Gently fold to combine.
Add vanilla, mix gently, and pour batter into the prepared tray.
Bake for 10–12 minutes until springy to the touch.
Remove and cool on a wire rack for 5 minutes, then cover with a clean towel to keep moist.
In a mixing bowl, combine heavy cream, powdered sugar, cocoa powder, and vanilla extract. Stir to dissolve solids.
Pour the mixture into your cream dispenser.
Charge with 1 N₂O cream charger, shake well for 10–15 seconds.
(If you are using a 9g cartridge, you can use it directly. If you are using a large tank, you will need to use a pressure regulator.)
Chill the dispenser in the fridge for at least 10 minutes before dispensing.
