Instructions
Prepare the gelatin
Sprinkle gelatin powder over cold water in a small bowl. Let it bloom for about 5 minutes until it swells and becomes jelly-like.
Heat the cream mixture
In a small saucepan, combine heavy cream, milk, and sugar. Warm over medium heat, stirring occasionally until the sugar dissolves and the mixture is hot but not boiling.
Dissolve gelatin
Remove the saucepan from heat. Add the bloomed gelatin to the warm cream mixture and stir until completely dissolved. Add vanilla extract and mix well.

Cool the mixture
Let the mixture cool to room temperature, then strain to remove any lumps.

Pour the mixture into a whipped cream dispenser. Seal it and charge with one cream charger. (If you're using a 9g cartridge, it can be used as is. However, if you have a larger whipped cream charger, eg1.1l or 3.3l n2o tank,a pressure regulator will be necessary.)
Shake the dispenser vigorously for 30 seconds to mix and aerate the mixture.
Chill and set
Dispense the mixture evenly into serving cups or molds. Refrigerate for at least 4 hours or until the cream jelly is fully set.
