Light Silky Cream Jelly

If you love smooth, creamy desserts with a delicate texture, this cream jelly recipe is perfect for you. Using a cream charger, you can whip up a light and airy cream base that sets beautifully into a soft, melt-in-your-mouth dessert. It’s simple to make, requires just a few ingredients, and is great for any occasion!

Ingredients

240ml heavy cream 1 tsp vanilla extract
120ml whole milk 1 ½ tsp gelatin powder
50g sugar 3 tbsp cold water (for blooming gelatin)

 Dissolve gelatin

Instructions

Prepare the gelatin

Sprinkle gelatin powder over cold water in a small bowl. Let it bloom for about 5 minutes until it swells and becomes jelly-like.

Heat the cream mixture

In a small saucepan, combine heavy cream, milk, and sugar. Warm over medium heat, stirring occasionally until the sugar dissolves and the mixture is hot but not boiling.

Dissolve gelatin

Remove the saucepan from heat. Add the bloomed gelatin to the warm cream mixture and stir until completely dissolved. Add vanilla extract and mix well.

Cool the mixture

Let the mixture cool to room temperature, then strain to remove any lumps.

Use the cream charger

Pour the mixture into a whipped cream dispenser. Seal it and charge with one cream charger. (If you're using a 9g cartridge, it can be used as is. However, if you have a larger whipped cream charger, eg1.1l or 3.3l n2o tank,a pressure regulator will be necessary.)

Shake the dispenser vigorously for 30 seconds to mix and aerate the mixture.

Chill and set

Dispense the mixture evenly into serving cups or molds. Refrigerate for at least 4 hours or until the cream jelly is fully set.

Enjoy your silky smooth cream jelly on its own or topped with fresh fruit, a drizzle of fruit sauce, or crushed cookies for texture.

✨ Tips

Using a cream charger helps incorporate air, giving the cream jelly a lighter texture than traditional methods.

For flavor variations, try adding matcha powder, coffee, or cocoa to the cream mixture before heating.

Make sure not to overheat the cream to preserve its delicate flavor and texture.
