These little metal canisters, filled with nitrous oxide (N₂O), are usually used to whip cream in seconds, giving it that luxuriously light and fluffy texture. But they’re not just for whipped cream—they can also help you create elegant, airy desserts with minimal effort.
Ever tried making desserts with a cream charger?
Today, I’m sharing a no-bake recipe that combines whole milk and fresh cream to make Vanilla Milk Mousse Cups. It's an easy, crowd-pleasing treat that looks fancy but takes very little time. All you need is a cream charger and a few simple ingredients.
How to make mousse at home?
Ingredients (Serves 4)
Whole milk – 200ml
Heavy cream (at least 36% fat) – 250ml
Vanilla bean or pure vanilla extract – 1 bean or 1 tsp
Granulated sugar – 40g
Gelatin sheets – 2 (or 5g powdered gelatin)
1 cream charger
Optional toppings: fresh berries, mint leaves, chocolate shavings
Equipment
cream whipper (500ml or 1L)
Saucepan
Small bowl (for blooming gelatin)
Fine mesh strainer
Rubber spatula or spoon

Step-by-Step Instructions
Slice the vanilla bean open and scrape out the seeds. Add both seeds and pod to the milk in a saucepan.
Heat gently over low heat until it just starts to steam—don’t let it boil. Stir in the sugar until dissolved.
While the milk is warming, soak the gelatin sheets in cold water for about 5 minutes until soft.
Remove the milk from the heat, discard the vanilla pod, and stir in the softened gelatin until fully melted.
Strain the mixture to remove any solids and allow it to cool to room temperature.
Once the vanilla milk base is cool, stir in the cold heavy cream.
Pour the mixture into your cream dispenser, making sure not to fill more than 80% of its capacity.
Secure the lid on the dispenser and attach the food grade nitrous. You’ll hear a hiss as the gas is released.
Shake the dispenser vigorously 10–15 times to mix the gas with the mousse base.
Place the dispenser in the refrigerator for at least 1 hour to allow the mousse to set and stabilize.
Once chilled, hold the dispenser vertically and carefully dispense the mousse into serving glasses or cups.
Top with your favorite garnishes—fresh berries, shaved chocolate, or a sprig of mint work beautifully.
Serve immediately, or store in the fridge for up to 2 days.
Tips for Best Results
Milk Matters: Whole milk gives the mousse a richer texture. Low-fat milk will result in a thinner consistency.
Vanilla Options: If you don’t have a vanilla bean, a good-quality vanilla extract works just fine.
Adjust the Sweetness: You can tweak the sugar level to suit your taste, or try honey or coconut sugar for a twist.
