Ingredients

2 tbsp granulated sugar 8 oz semisweet chocolate, chopped
1 ½ cups chocolate cookie crumbs 1 ½ cups granulated sugar
½ cup cocoa powder and 4 large eggs
2 tsp vanilla extract and ¼ tsp salt

¼ cup cornstarch

2 cups heavy cream, chilled
½ cup granulated sugar 3 tbsp powdered sugar
¼ cup cocoa powder and 3 large egg yolks 1 tsp vanilla extract
4 oz semisweet chocolate, chopped 1 cream charger
2 tbsp unsalted butter and 1 whipped cream dispenser

 

Instructions


Make the crust

  • Preheat oven to 350°F (175°C).
  • In a bowl, mix cookie crumbs, melted butter, and sugar until evenly combined.
  • Press firmly into the bottom and up the sides of a 9-inch pie dish.
  • Bake for 8 minutes, then set aside to cool.

 

Prepare the fudgy filling

  • In a heatproof bowl, melt butter and semisweet chocolate over a saucepan of simmering water (or in short bursts in the microwave). Stir until smooth.
  • Whisk in sugar and cocoa powder.
  • Beat in eggs, one at a time, followed by vanilla and salt.
  • Pour into the crust and bake for 15–18 minutes until just set but still slightly wobbly in the center. Cool completely.

  • In a saucepan, whisk together sugar, cornstarch, cocoa powder, and milk over medium heat until warm.
  • Whisk egg yolks in a separate bowl. Slowly add a bit of the hot mixture into the yolks (tempering), then pour yolk mixture back into the saucepan.
  • Continue whisking until thickened. Remove from heat and stir in chocolate, butter, and vanilla until smooth.
  • Spread evenly over the cooled fudgy layer. Chill for at least 2 hours.

 
Make whipped cream with a cream charger

  • Pour cold heavy cream into your cream whipper.
  • Add powdered sugar and vanilla extract.
  • Seal the whipper, charge with one cream charger, If you are using a large cream charger, you will need to use a pressure regulator,and shake well.
  • Dispense over the chilled pie in generous swirls.

 

Serve & enjoy
