Southern Homemade Coconut Cream Pie


Some desserts are better when they don’t try too hard, and coconut cream pie is one of them. It reminds me of the kind of pie you might find cooling on a kitchen counter after a Sunday dinner—simple, creamy, and generously topped with coconut.

For this version, I wanted to keep that Southern homemade feeling but give it a slightly fresher finish. Instead of using a heavy meringue topping, I use freshly whipped cream made with whip cream cartridges. The cream is light, smooth, and just sweet enough to balance the rich coconut filling.

What You'll Need

9-inch pie crust
Pie weights or dried beans
2 cups whole milk
1 cup heavy cream
3 egg yolks
3/4 cup granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
1 cup sweetened shredded coconut
2 tablespoons unsalted butter
1 teaspoon vanilla extract

1 cup cold heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
8g cream charger 10 pack
1/4 cup toasted shredded coconut

1.Start with the Crust


Preheat your oven to 375°F (190°C).

Fit the pie crust into a 9-inch pie dish and gently press it into the sides. Prick the bottom with a fork, then line it with parchment paper and fill it with pie weights.

Bake for about 15 minutes. Remove the weights and parchment, then bake for another 8–10 minutes, until the crust is lightly golden.

Let it cool completely.

A little kitchen note: Don't rush this part. I know it's tempting to pour the filling into the crust while it's still warm, but a properly cooled crust stays much crisper once the creamy filling goes in.


2.Build the Coconut Filling

Combine the sugar, cornstarch, and salt in a saucepan. Whisk in the milk, heavy cream, and egg yolks until everything is smooth.

Cook over medium heat, stirring constantly. The mixture will gradually become thicker. Once it reaches a thick pudding-like consistency, take it off the heat.

Now comes my favorite part. Stir in the butter, vanilla, and shredded coconut while the custard is still warm.

If you have a few extra minutes, toast some of the coconut in a dry skillet until lightly golden. It adds a wonderful nutty aroma and makes the coconut flavor much more noticeable.

3.Let the Pie Set

Pour the warm coconut custard into the cooled crust and smooth the top.

Cover the surface and refrigerate for at least 4 hours, although I personally prefer leaving it overnight. The filling becomes firmer, the coconut flavor develops, and the slices are much cleaner.

This is one of those desserts that actually benefits from being made ahead.


4.The Topping Makes the Difference

When you're ready to serve the pie, pour the cold heavy cream into a whipped cream dispenser. Add the powdered sugar and vanilla.

Secure the dispenser and use one 8g cream charger according to the manufacturer's instructions. Shake the dispenser well, then keep it chilled until you're ready to decorate.

Pipe the whipped cream over the chilled coconut pie. You don't need to make it perfectly neat. I actually prefer a few soft swirls and peaks—it makes the pie look homemade rather than overly styled.

Scatter toasted coconut over the top.




What I Love About This Pie?

The first time I made this version, what surprised me most was how much the whipped cream changed the overall experience.

The coconut custard is rich and creamy on its own, but the fresh whipped cream adds a much lighter texture. When you get all three layers together—the crisp crust, silky coconut filling, and airy cream—it doesn't feel as heavy as you might expect from a traditional cream pie.

The toasted coconut on top is worth doing, too. It adds just enough crunch to keep every bite interesting.

And honestly, this is the kind of pie where I wouldn't worry about making every slice look perfect. A little uneven whipped cream and a generous sprinkle of coconut make it feel like something that actually came out of a home kitchen.


If You're Making It for Guests

I recommend preparing the pie the day before and keeping it refrigerated overnight. Add the whipped cream shortly before serving.

That way, the custard has plenty of time to set while the whipped cream stays fresh and airy.

For an extra Southern-style presentation, serve each slice with a little additional toasted coconut on the side. A cup of hot coffee is not optional in my kitchen.

One Last Bite

A homemade coconut cream pie doesn't need much decoration to make an impression. Good coconut, a buttery crust, and a smooth custard already do most of the work.
